Classic Mojito: Cuba’s Iconic Rum Cocktail

The Mojito looks simple but rewards careful technique. Muddle the mint too hard and bitterness dominates. Too softly and the aroma stays locked in the leaves.
The Classic Spec
- 50ml Spirited Union white rum
- 25ml fresh lime juice
- 8–10 fresh mint leaves
- Soda water (approx 60ml)
- Lightly muddle mint with syrup
- Add lime juice and rum
- Fill with crushed ice
- Top with soda. Stir gently
- Garnish with mint sprig and lime wedge
Technique Notes
‘Lightly muddle’ means pressing the mint to release essential oils—not grinding it to pulp. Over-muddling releases bitter chlorophyll compounds. Use fresh, vibrant mint only.
